GARLIC PARMESAN CARROTS: This Healthy Side Dish Kicks Ass

This is why you need to make this side dish:
#1. It's easy.
#2. It's cheap.
#3. It's healthy.
#4. It's friggin delicious.
When I make these carrots, my family gets excited. First off, we are a carrot-loving lot. All four of us love carrots. It's not often that you find any type of food that the whole family loves. Well, unless we're talking about donuts and shit. I mean everyone loves that stuff. Buuuuuuut, this is a weight loss blog so forget I ever mentioned donuts.
Damn, now I'm thinking about donuts.
Okay come on, Gabby, get your shiz together and focus. Carrots. Healthy. Delicious. Alright, I'm back on track.
So anyway... these cooked carrots, um... they are AMAZING!
I buy the five pound bags of Bolthouse Farms organic carrots at Sam's Club. You'll only need half of the bag for your side if you're feeding 3-5 peeps. If you have a large crowd then yes, I would recommend making all five pounds. This bag works out perfect for us because we get one dinner side out of it plus I have enough left over to make up raw carrot baggies for lunches or for healthy snacking at home. I get all of this out of a bag that costs me under $3.50. I mean seriously, it's awesome!
I would like to point out that I do in fact realize that me getting this excited over a freakin' bag of carrots is lame, but dammit I don't care. Thrills are cheap and hard to come by these days.
I'm telling you if you like carrots, make these suckers! They couldn't be easier but yet they look and taste like they're gourmet. They also look beautiful on a plate so this is a perfect side to make if you're having dinner guests!

GARLIC PARMESAN CARROTS

WHATCHU NEED:
2 - 2 1/2 lbs CARROTS (peeled)
1 TBS BUTTER (softened)
PARMESAN CHEESE
COOKING SPRAY (I use my olive oil Misto Spray)
WHATCHU DO:
1. Peel and trim carrots and place in a sprayed baking dish.
2. Brush your softened butter over the carrots.
Don't freak out about using butter! Butter has gotten a bad rap for far too long. It actually has many health benefits (as long as you aren't eating it by the stick, of course). This recipe is only using 1 TBS of butter for your entire side!
Some important butter facts!
*Butter contains fat-soluble vitamins (including A, E, and K2), Butyrate (which is good for your colon), and Conjugated Linoleic Acid (CLA). CLA has powerful effects on metabolism and is actually sold as a weight loss supplement. Butter has also been shown to lower the risk of obesity in recent studies.
Whatever you do, do NOT use that fake shit on the market! That stuff is straight up poison. In moderation, just use butter. It's actually good for you and hello, it's delicious!
3. Sprinkle your carrots with garlic salt and dried parsley. You don't need specific measurements. Just sprinkle it evenly over the carrots until they look exactly as you want them to.
4. Bake carrots at 350 degrees for 50-60 minutes until a fork can easily cut through the thickest part.
Note:
If you are using baby carrots, they will cook faster. I would check them after 30-40 minutes.
5. Once cooked, take carrots out and then sprinkle with Parmesan cheese. Again, no specific amount, just use however much you prefer. Then put back in the oven for 5-10 minutes or until the cheese melts.
VIOLA!
