One of my most favorite things about fall is the yummy comfort foods. I'm so happy fall is here! Yes, I know it's only early September, but it's still fall. Don't give me any of that Fall Equinox bullshit with specific dates to prove otherwise. It's fall as soon as school starts back up. Just like it's not tomorrow at midnight, it's tomorrow when you wake up! I don't want to be nailed with facts and logic. Ain't nobody got time for that.
But you wanna know what you do have time for? Delicious banana nut bread that is done in four quick minutes! Not only is it delicious, but it won't stick to your ass! And it'll give you all the fall foodie feels.
This makes the perfect dessert if you're trying to eat healthy. Hell, who am I kidding. I had this shit for dinner last night. I'm not even playin'. My hubs made jalapeño hamburgers on the grill last night with organic gluten-free mac and cheese, which sounds good I know, but I just wasn't feelin' it. I wanted a filling dessert with a hot cup of tea. See that's the beauty of being a grown-up, you can eat whatever the hell you want for dinner. I chose banana nut bread over burgers. And I just might have that again tonight.

This recipe could not be easier! Easy and quick! And you don't need to know how to cook to make this! Even my 10 year old can fire out this banana bread recipe like a boss.
This banana nut bread also makes the perfect breakfast if you're rushed for time in the morning. It pairs wonderfully with a banana, both of which you can eat in the car on your way to work! If you're making this for dessert, you can always make two and keep one for your breakfast the next morning (I often do this). Just store your extra banana bread in a sealed baggie or container on your counter.

WHATCHU NEED:
1/4 cup oats (traditional, not instant)
1 egg
1 small banana
1 tsp ground ceylon cinnamon (or regular ground cinnamon)
1/4 tsp baking soda
2 tsp raw honey
1 TBS chopped walnuts
1 coffee mug
Coconut oil or cooking spray (to coat mug)
WHATCHU DO:
1. Put your oats in blender (or FP) and pulverize them. Pulverize until they're the consistency of a course flour.
2. Throw all other ingredients into the blender EXCEPT the chopped nuts.
3. Coat your mug with either coconut oil or cooking spray.
4. Pour your batter into mug and mix in chopped nuts.
5. Microwave for 4 minutes (Time may vary depending on type of microwave).
6. You can eat right from your mug with a spoon or dump out your banana bread. You can also cut your banana bread in half, which will give you two muffin-sized pieces.
Top with your desired toppings, if any. Cream cheese, sliced bananas with honey, or just plain butter are all super yummy!
