Cheesy Roasted Brussels Sprouts
LOW CARB | KETO | GLUTEN-FREE | HIGH PROTEIN
I’m a big fan of veggies, but sometimes to get the rest of your family on board, you gotta smother that shit in cheese and lots of it. I’m down wit it. My husband pretty much rejects all things green and healthy, but he will eat these cheesy Brussels sprouts if I use pepper jack cheese because that’s his fave cheese. However, he most often gets voted out because my daughters don’t like pepper jack, so I usually use provolone. Sometimes if I’m feeling nice I’ll do half and half.
You really can’t go wrong with any cheese here. Just use what your fam likes the most. You can of course add additional veggies to this dish too. Mushrooms pair nicely with the sprouts here. Basically you can throw whatever veggies you want on the baking sheet and then dump whatever cheese onto it all. So have at it ;)

Cheesy Roasted Brussels Sprouts

MAKES 4 SERVINGS
WHATCHU NEED:
1 lb Brussels Sprouts
2-3 Slices of Red Onion, thick
2 TBS Olive Oil
1/2 tsp Garlic Salt
4 slices Provolone Cheese OR preferred cheese
WHATCHU DO:
1. Preheat oven to 425 F.
2. Mix all ingredients in medium-large bowl and toss to coat.
3. Put Brussels sprout halves (cut-side down) and onion slices on sprayed or lined baking sheet. I usually line with either non-stick foil or parchment paper.
4. Sprinkle desired amount of Himalayan salt over Brussels sprouts and onions.
5. Roast for 15-20 minutes or until desired tenderness. The underside of the Brussels sprouts should be a nice charred roasted color.
6. Take baking sheet out of oven and switch oven setting to broil. While out of oven, push sprouts and onions together (still single layer though) until there are no gaps.
7. Place 4 slices of cheese over all the veggies.
8. Place baking sheet back in the oven under the broiler until cheese melts and is a nice golden brown. Broil for 2-5 minutes. WATCH CLOSELY!
9. Enjoy!
