Keto Strawberry Milkshake

Are you in need of a delicious treat? Whether you follow a low carb lifestyle or not, this is a delicious strawberry milkshake to try! I recently found two giant bags each of frozen strawberries and blueberries on the bottom of my deep freezer. I don’t know how I forgot about them. But I did have them in grocery bags sitting on the bottom of the freezer so unless I unburied them and peaked inside the bags, they were definitely going to remain unseen, lol. I only found them because I swore I had frozen cauliflower rice steam bags somewhere and I was hell-bent on finding them. Turns out I never found those so no idea what’s up with that, but I think four giant bags of yummy berries is a good consolation prize.
I’ve been making a bunch of berry-themed recipes lately with my berry-jackpot-freezer-find. This milkshake is one of them! My husband has been mentioning milkshakes a lot lately. He is not a sweets-eater by any means but he does strangely get on milkshake kicks about once a year. IDK what it’s about, but I do know my daughters rejoice whenever his milkshake cravings start up again because they know they will reap the benefits, haha. Soooo, I’ve been making him these strawberry milkshakes topped with yummy keto whipped cream. He (and my girls) have no idea they are a low carb healthy version (muh hahaha).
Actually they have no idea that 95% of the treats I make them are healthy. When I make a delicious dessert, they assume it hasn’t been modified and I let them run with that thought. It’s a damn shame you have to trick and dupe your own family into being healthy. Because for some messed up reason when they know it’s healthy, they automatically assume it won’t taste as good and I have to hear complaints before the first bite is even taken. So I just trick them and smile silently to myself when they ask for seconds. Total suckers.

WHATCHU NEED:
2 cups almond milk, divided
1/2 cup frozen strawberries
1/4 cup heavy whipping cream
2 teaspoons Pyure granulated stevia OR preferred sweetener
OPTIONAL: 1/2 teaspoon strawberry extract (if you want a more intense strawberry flavor without the added carbs.) If you can afford the extra carbs, simply use 1 or 1.5 cups of frozen strawberries instead of the 1/2 cup amount listed above.
*VEGAN OPTION / DAIRY-FREE OPTION: Use a dairy-free HWC. Silk makes a good one!
WHATCHU DO:
Make ice cubes out of 1 cup of the almond milk (the remaining cup will not be frozen). You can use either ice cube trays or silicone molds. I use my square silicone mold.
Once your almond milk ice cubes are completely solid you are ready to make your milkshake! Simply add ALL ingredients to a blender and mix until smooth.
Notes:
Make sure you have a blender that is capable of handling ice cubes. I learned this the hard way years ago and broke my blender!
You can of course add more sweetener if you like your milkshakes super sweet. Simply taste test and if you want it sweeter, add more sweetener and blend again. Repeat until you reach desired taste.
PRO-TIP: You can make this a PROTEIN MILKSHAKE by adding strawberry protein powder to the recipe. You could also use vanilla protein powder!
PRO-TIP: You can replace the strawberries with nearly ANY other frozen fruit. Both blueberries and raspberries (which are also keto-friendly) are amaze-balls too, but you can use damn near any fruit!
PRO-TIP: If you rather make more of a strawberry milk drink instead of a milkshake, reduce the almond milk to 1 cup and do not make the almond milk ice cubes. Also reduce sweetener by half. It won’t be frosty and thick like a milkshake but still very tasty.
You gotta try this whipped cream! It tastes so good!
